When I go to visit my boyfriend at school at Sacred Heart University in Connecticut we are always trying to find new places to try out. Typically we end up getting all you can eat sushi anywhere we find since I live, breathe, and sleep veggie rolls. After lots of searching we came across this small cafe in Fairfield, CT that served all vegan breakfast and lunch options. We was overly thrilled to try it out so we jumped in the car and headed 20 minutes to Fairfield.
The menu had options from coffees, smoothies, and juices to breakfast baked goods, sandwiches, and entrees. It was pretty early in the afternoon so it was still a good time for breakfast. Breakfast has got to be my favorite meal of the day, I could eat it for lunch or dinner too if I really wanted. I was stuck between apple pie waffles and a bagel that had "bacon", tofu, and maple glaze. I was craving something a little less sweet and a little more satisfying so I went with the bagel. This had to have been the best decision I had made, the bagel was TO DIE FOR.

It was toasted with grilled tofu marinated in a maple glaze, baked bacon seitan, and herb vegan mayo. With a side of coffee, it was a perfect way to start off my day. I 100% debated eating two.
Since Timmy isn't really a vegan, just loves to try the food all the time, he likes dating me since I can't eat his food when we go out. BUT whenever we go out to a vegan restaurant I take advantage and I try his food a couple of times. Timmy got a "Seitan BBQ Pesto Griller" which was also very good and filling and again I would have gone back for more. To finish off our breakfast/lunch we split a banana muffin that was cooked perfectly with walnuts on top.
The Stand Vegan Cafe was definitely a 10/10 with no complaints at all. The atmosphere was trendy and hipster and the perfect place to relax and do work. I am excited to go back and try that waffle next time. Keep a look out for the review on it!
