Vegan Cheesy Enchiladias

Recently I have been craving one of two things: banana muffins or enchiladas. I found these chickpea and almond flour tortilla shells at Whole Foods last week so I decided to test out a enchiladas recipe. This recipe has three different parts, the shell with filling, the sauce, and the cheese. Each part is simple and gluten free.


I have been trying out different recipes with gluten free flours because I have a very sensitive digestive system and want to see if subsituting in gluten free alternatives eases my stomach. New flours I have been trying out are almond flour, buckwheat flour, and tapioca flour. Each one has amazing taste and texture and are best for specific types of cooking, baking, and thickening. I will keep you all update on which one I use for each recipe and how they come out!



With isolation still in effect I have been trying out new workouts and putting my body to the test. I am LOVING this workout program which is in an E-book called Sweat It to Shred It by Sarah's Day. I 10/10 recommend anyone, whether you are athletic or not, to try this workout program out if you want to start fresh with your active lifestyle or just try something new. I will be posting more blog posts to update everyone on my daily workouts and progress!
