Double Chocolate Fudge Brownies

Trying to stay occupied on these days of quarantine? Test out your baking skills with these super chocolatey vegan brownies. Everyone has got to have a cheat day every once in a while and these brownies are the perfect way to help your sweet tooth!


I use Shoprite semi-sweet chocolate chips in this recipe which are vegan and tasty. Melting these chocolate chips into this recipe adds fudginess to your brownies that will leave you wanting more.


Let the brownies cool before cutting into them or they will break apart. I also added melted peanut butter to the top for preference, it is optional.




Double Chocolate Fudge Brownies

Duration: 45 minutes

Servings: 9


Ingredients:

  • 1 1/2 cup semi sweet vegan chocolate chips, melted (put 1/2 cup to the side not melted)

  • 2 tbsp flaxseed

  • 6 tbsp water

  • 1 cup sugar

  • 1/2 vegan butter (melted)

  • 1/2 cup of almond milk

  • 2 tsp vanilla extract

  • 3/4 cup flour

  • 1/4 cocoa powder

  • 1 tsp baking powder

  • 1 tsp salt

  • 1/2 cup peanut butter, melted


Instructions:

  1. Preheat the oven to 350 degrees.

  2. Combine flaxseed and water and let sit for about 10 minutes to create a thick consistency. Begin preparing other ingredients.

  3. Combine all dry ingredients to a medium size mixing bowl. Whisk together till well combined and make sure there are no clumps.

  4. Add in all wet ingredients including the flaxseed mixture (except for the 1/2 cup of chocolate chips and peanut butter) and fold using a rubber spatula until well combined.

  5. Fold in the 1/2 cup of chocolate chips.

  6. Transfer brownie batter into a 9*9 baking pan.

  7. Drizzle melted peanut butter on top, then with the end of a spoon drag peanut butter into a swirling motion.

  8. Bake for 30-35 minutes.

  9. Remove from oven and let sit for 20 minutes to cool down.

  10. Cut in 9 pieces and enjoy!
