Easy Banana Muffins

Looking for an easy recipes that takes little effort and not too much time! I made these easy banana muffins only an hour before I had to run to class and they came out perfect for a quick snack on the run. With just five simple ingredients anyone can have the fluffiest, sweetest banana muffins in just 40 minutes.


If your bananas are just a day or two old to eat straight this is a recipe that can help reduce waste. The other ingredients are things people typically have sitting around their pantry. The ingredients include ripe bananas, chia seeds, agave syrup, whole wheat flour, and baking powder.


Some pointer I found my second go around of making these muffins is that if you are more of a sweet tooth and want that extra sweetness you may want to add a 1/2 cup of organic sugar.


Recipe

  • 5 Ripe Bananas

  • 3 tbsp Chia Seeds

  • 1/4 cup Agave Syrup

  • 2 cups Whole Wheat Flour

  • 2 1/2 tsp Baking powder

  • 1/2 cup Organic Dark Chocolate Chips *optional* (I used Shoprite brand dark chocolate chips)

Instructions


Pre-heat the oven to 350 degrees.


Mash up the bananas using a fork in a mixing bowl until they are a smooth (non-clumpy) consistency.


Add the agave syrup. Followed by the rest of the dry ingredients. If desired fold in the dark chocolate chips.


If the consistency of the mixture seems too dry, add 1/4 cup of plant-based milk alternative.


Separate mixture into cupcake tray giving each muffin an 1/2 inch of space at the top to rise.


Place in the tray into the oven for 40 minutes. Use a toothpick to check the center is cooked through.


Place on cooling rack for about 10 to 15 minute to allow time to cool.
