Hearty Vegan Split Pea Soup

Through all the craziness going on throughout the world it is always comforting to have a warm bowl of soup to enjoy while relaxing at home. I hope everyone is staying safe, calm and healthy. Take precautions like washing your hands, covering your mouth, and practice social distancing. Take this free time to practice new recipes and enjoy good food with family.


This vegan split pea soup my mom has been making for me since I was little. It is high in protein, satisfyingly filling, and the perfect meal for lunch or dinner. I like to use Goya Split Peas but any brand of split peas will work.


Once the ingredients are all well incorporated on the stove, keeping the pot at a low simmer for an hour and a half will break down all the ingredients to make a smooth soup.


Depending on preference add more or less water for how thick or thin you would like your soup. I prefer mine a little bit thicker rather than thinner.



Hearty Vegan Split Pea Soup

Duration: 1 hr 45 minutes

Servings: 4


Ingredients:

  • 16 ounces Goya Split Peas

  • 2 Tbsp olive oil

  • 6 cups water

  • 3 garlic cloves minced

  • 1 large carrot chopped

  • 1 medium onion chopped

  • Salt and Pepper to taste


Instructions:

  1. Dice the onions and carrots and mince the garlic. Add olive oil to a large pot on medium heat. Place the diced/minced carrots, onions, and garlic in the pot and sauté till the onions are translucent.

  2. Rinse the split peas in strainer to remove any residue and clean the peas.

  3. Add the 6 cups of water to sautéed onions, carrots, and garlic.

  4. Add in rinsed split peas.

  5. Bring to a boil.

  6. Once ingredients are boiling, change heat to simmer for about an hour and a half or until peas are completely broken up.

  7. If prefer thinner soup add more water to preference.

  8. Serve and enjoy!
