Homemade Black Bean Burgers

With it being 76 degrees today I thought it would nice to add some summer favorites into my recipes to try! Vegan burgers are the best summer food to have when having a barbecue, a pool party, or a picnic with friends. My favorite kinds of vegan burgers are black bean burgers, chickpea burgers, and Boca burgers.


I found this recipe on Tasty since it was the first time I attempted to make homemade vegan burgers from scratch! This is a perfect recipe if you have a lot of time on your hands to spend cooking. There are a lot of steps and ingredients but it is definitely worth it in the end result. I will definitely be making this recipe again especially in the summer for barbecues with friends and family.



Have access to a large food processor for this recipe because there will be a lot of ingredients that will need to be processed at once.


Homemade Black Bean Burgers (by Tasty)

Duration: 1 hour

Ingredients:

  • 1 cup walnuts

  • 1 cup mushrooms

  • 2 tbsp olive oil, divided

  • 2 tbsp low sodium soy sauce

  • 1 yellow onion, diced

  • 2 cloves of garlic, minced

  • 1 tsp salt

  • 1 tbsp tomato paste

  • 1 cup cooked black beans

  • 3 tbsp beets, grated

  • 1 cup cooked brown rice

  • 1 tbsp vegan mayonnaise

  • 1 tsp vegan Worcestershire

  • 1 tsp liquid smoke

  • 1/2 cup whole wheat flour

  • Vegan BBQ sauce for basting (I like Stubbs)

  • Tofutti Vegan Cheese Slices

  • Sesame burger bun

  • Chipotle vegan mayo

  • Lettuce

  • Sliced tomato


Instructions:

  1. Add walnuts to a food processor and blend till crumbled.

  2. Add mushrooms and blend till finely chopped.

  3. In a large skillet over medium heat, add 1 tbsp olive oil and add the mushroom walnut mixture, cook for 5-8 minutes or until all moisture has evaporated.

  4. Add soy sauce and cook, stirring occasionally, until dry. Transfer to a bowl.

  5. Add 1 tbsp olive oil to skillet. Add the onion and cook until semi-transulcent.

  6. Add garlic, salt, and tomato paste, and cook for another 3-5 minutes.

  7. Add black beans and onion mixture to food processor, and blend until mostly smooth.

  8. Transfer mixture to bowl and add beets, rice, vegan mayo, Worcestershire sauce, and liquid smoke, and stir until combined.

  9. Add in whole wheat flour and knead burger mixture together until everything is well incorporated.

  10. Form burger into 4-5 patties depending on thickness and size preference.

  11. In large skillet, over medium-heat cook patties for about 5 minutes on each side.

  12. Add vegan cheese and melt.

  13. Assemble burger with vegan chipotle mayo, lettuce, tomato on sesame bun.

  14. Serve and enjoy!
