About

Hey! I'm Courtney
Background
Welcome to my entirely vegan blog! I adopted my vegan diet back in 2013 at about 13 years old. Currently I am a Junior at Monmouth University studying public relations. I found going vegan to be a very simple, yet challenging transition. I first went vegetarian for a year to adjust to this major life diet change, then decided to give vegan a go. I found it easy and simple to cut out animal products from my life. This included meat, poultry, seafood, dairy, eggs, animal fur/leather, and any other products that used animal ingredients or animal cruelty.

At first, it took a while to adapt to finding healthy recipes that could give me both the satisfying benefits along with nutritional value. I ended up eating a lot of unneccessary carbs and sugars. Eventually, I came to do more research on the types of foods I needed to eat in order to keep my new diet healthy and obtainable.

The internet truly became my new best friend. I found countless bloggers, chefs, and even other newly vegan just like me to help me transition properly. I followed a ton of vegan lifestyle advocates who I still follow today to find great, tasty, and fulfilling recipes.

Why Vegan?
Since a young age I always had extra love and care for animals. Not just house pets, but even wildlife. Being younger, it was always harder for me to stick with these restrictions because I wasn't able to cook for myself yet. As I got older I enjoyed standing by my mom and learning the techniques and skills it takes to cook. Right before High School was officially when I became a full time vegetarian after on and off attempts prior. I did it specifically for the animals to stand for my beliefs and values. What I didn't realize was the underlying healthy benefits I had after starting this. It helped clear my skin (give or take a break out here and there), it help me feel more energized and fit, I noticed myself getting sick less, and even my muscles and body felt clean and detoxified.

As more time went by I did more research and learned new things all the time about the benefits of being vegan. Not only for the animals but also myself and the environment benefited from these changes I made to my life.

Along with being vegan...
Besides being vegan I enjoy working out to keep myself healthy and fit by running, doing yoga, and lifting. I've learned that incorporating both healthy eating and consistent exercise I can be a healthy and happy person because it relieves stress and clears the mind. I am also apart of Alpha Omicron Pi Fraternity on my college campus where I contribute to different community service activities to help give back.

On my down time I listen to music from artists such as Queen, The Beatles, Luke Bryan, Luke Combs, Halsey, and Billie Ellish. I typically listen to any genre you can think of depending on the day.

I hope that gives everyone an idea of who I am and why I am so passionate about my lifestyle. Enjoy the rest of the page where you can find recipes, places to eat, and products to try out!

xoxo Courtney
